Waffles with smoked salmon
The highlight of any brunch.
Ingredients for 4-6 waffles:
125 g water or milk
3 eggs
100 g butter, melted
250 g flour
5 g baking powder
Curry (mild), salt, pepper
Sauce:
180 g natural yoghurt
2 tbsp dill, chopped
Salt, pepper, a little lemon juice and some grated rind
Covering:
180 g Mövenpick Icelandic Smoked Salmon
1 onion cut into rings
Capers
Method:
Mix the water or milk with the eggs and melted butter. Sift in the flour and baking powder and mix. Season with curry, salt and pepper. Let the dough rest for some 10 minutes. Heat the waffle iron and grease it once before first use by rubbing it with a piece of household paper sprinkled with vegetable oil to ensure that nothing sticks and the waffles turn a wonderful brown. Place the desired amount of dough (approx. 1½ tbsp) on the waffle iron and cook until golden brown. In the absence of a waffle iron, fry the mixture in a frying pan like a pancake: place the mixture gently in the pan and use a lid. For the yoghurt sauce, chop the dill and add to the yoghurt together with salt, pepper, lemon juice and grated lemon rind and mix. Cover the waffle with the salmon and add some of the dill yoghurt. Decorate with the onion rings and capers.
For a sweet waffle variant: leave out the curry and pepper and add 1 pinch of salt. Add 3 tbsp sugar and 1tbsp vanilla sugar. It’s best to use the milk (not water) for this sweet variant. Otherwise proceed as for the savoury waffles. Serve the waffles while still warm with jam or fruit yoghurt.
