Summer recipe: Yoghurt Popsicles
You can always impress people with a refreshing and exotic tasting snack, especially when it’s warm outside. It’s even better if you can prepare it in a flash and use the time to get some sun.
Product: Mövenpick Fine Yoghurt Peach-Passion Fruit
Refreshing Peach-Passion Fruit Popsicles
Ingredients for 8 pieces:
50 g unsalted pistachios
5 150 g tubs of Mövenpick Fine Yoghurt Peach-Passion Fruit
1 organic lime
300 g white chocolate
30 g coconut oil
1 tsp vanilla essence
50 g almond slivers
8 popsicle sticks
Preparation
1. Roughly chop the pistachios. Pour the Mövenpick Fine Yoghurt Peach-Passion Fruit into a bowl and stir gently so that the fruit filling is incorporated. Fill 8 popsicle moulds (of around 100 ml) with Mövenpick Fine Yoghurt Peach-Passion Fruit and sprinkle with 2 tbsp chopped pistachios. Insert popsicle sticks into the mixture and freeze for at least 5 hours, preferably overnight.
2. Wash the lime in hot water and finely grate off the peel. Roughly chop the chocolate and melt in a hot bain-marie with coconut oil and vanilla essence while stirring. Pour the melted chocolate into a bowl (around 15 cm ø).
3. Dip the popsicles into the white chocolate diagonally one by one, sprinkle each with lime zest, almond slivers or the remaining pistachios and serve immediately.
Preparation time around 20 minutes. Waiting time around 5 ½ hours.
