Smoked salmon mousse
The all-rounder among light delicacies. This smoked salmon mousse can be served at brunch or as an aperitif or starter.
Ingredients (for approx. 4 servings):
120 g Mövenpick Coho Wild Salmon
150 ml vegetable stock, cold
200 ml full-fat cream
Some grated lemon rind
10 g gin
1-2 squeezes concentrated lemon juice
Some chopped dill tips
Pepper, salt
Decoration:
Onion rings
Capers
Dill
Method:
Puree the Coho wild salmon well in the stock. Add the other ingredients and mix well again. Season with salt and pepper. Transfer the mixture to a whipped cream dispenser and chill for at least 2 hours.
Place a gas cartridge in the dispenser and shake vigorously. Dispense the mousse just before serving: it is very light and melts easily on the tongue.
