Salmon wrapped in courgette
It warms a gourmet’s heart when salmon is not served cold.
Ingredients (For 4 people):
2 Mövenpick smoked salmon fillets, each approx. 110 g
2 medium courgettes, preferably long
olive oil for frying and sautéing
salt, freshly ground pepper
1 shallot
1 lemon
1 dessert spoon of vegetable stock
1 dessert spoon of cream
1 dessert spoon of white wine
Method:
Slice the courgettes lengthways into 8 thin slices of approx. 2 mm.
Quickly fry the courgette slices in olive oil in a non-stick frying pan. Season with salt and pepper and leave to cool.
Finely chop the shallot for the sauce. Finely grate the lemon peel and squeeze the juice.
Sauté the shallot in a small pan with a small amount of olive oil. Add the lemon juice, stock and lemon peel and bring to the boil. Add the cream and reduce down to half the volume.
Cut the salmon fillets into quarters and season with pepper. Wrap a courgette slice around each one.
Heat a non-stick frying pan. Place the salmon fillets wrapped in courgette into the pan with the overlap underneath, add the white wine and cover. Reduce the heat to the lowest setting and steep the fillets for around 2 minutes, so that they are slightly warm.
At the same time, bring the sauce back to the boil. Serve the salmon fillets on warmed plates. Add the white wine from the frying pan to the sauce, beat to a foam with a hand blender and season to taste with salt and pepper. Pour the sauce around the salmon fillets. Perfect when accompanied with mashed potato.
