Coffee Cheesecake
Ingredients
– 225 g dark cookies
– 80 g butter
– 2 tablespoons sugar
– 350 g cream cheese, natural
– 100 g crème fraîche
– 3 eggs
– 100 g sugar
– 2 cups Mövenpick Caffè Crema
Preparation
- Crush dark cookies for the base. You can use a food processor for this, but it also works if you put the cookies in a plastic bag and then crumble them.
- Melt the butter in a saucepan, stir in the cookies and sugar and pour the mixture into a small springform pan.
- The bottom should be evenly and firmly pressed. Don’t forget to press the butter-crumb mixture to the edges as well. This will help the cheesecake hold together later.
- For the cream, mix all the other ingredients with a mixer and add the coffee at the end.
- Pour the mixture into the springform pan and bake in a preheated oven at 175 °C for 30 minutes.
- The cheesecake is still liquid in the middle, so don’t be surprised. However, after a few hours in the refrigerator, the cream will be firm and the cake will be ready to serve.
