Banana bread - Mövenpick Fine Food

Banana bread

Ingredients for 1 portion :  

  • Mövenpick of the Year Crema Kenya
  • Warm water
  • 2 tbsp ground flaxseeds
  • 4 bananas
  • 1 pinch of vanilla pulp
  • 3 tbsp coconut oil
  • 180 ml plant-based milk
  • 200 g wholemeal wheat flour
  • 3 tbsp brown sugar
  • 4 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • 150 g rolled oats
  • 50 g vegan chocolate
  • Loaf tin (baking tin)

Preparation:

  1. Prepare 2 espressos with Mövenpick of the Year Crema Kenya in a fully automatic machine.
  2. Puree three bananas. Add the espressos, warm water, coconut oil, the plant-based milk and the vanilla pulp and mix thoroughly.
  3. Combine the wholemeal wheat flour, linseed, salt, baking powder, rolled oats and cinnamon. Mix in a bowl and add to the banana mixture.
  4. Chop the chocolate and fold in.
  5. Halve the 4th banana lengthways.
  6. Put 3 tbsp water and 3 tbsp brown sugar in a pan and heat. Place the banana halves in the pan and allow to caramelise.
  7. Place the 2 caramelised banana halves in the bottom of a greased loaf tin and fill with the batter.
  8. Place the 2 caramelised banana halves in the bottom of a greased loaf tin and fill with the batter.

Bake the banana bread at 180 degrees (fan oven) for about 50 minutes.
